About Us

Grayson Bay Oyster Company is a tide-to-table, sustainable family oyster farm located in Pensacola Bay, Florida and named after the owners’ two young boys, Baylen and Grayson Smith.

Our mission is to provide high-quality oysters while helping to improve water quality and educating people on our sustainable aquaculture methods. 

Grayson Bay oysters are hand-raised on the surface of the water where they get plenty of food, wave tumbled and help clean our bay. Oysters are one of the most sustainable of all food crops. What we put in, we take out. Oysters require no feed or supplements and sequester carbon in their shell, cleaning as they filter. The farm also acts as a nursery to juvenile fish and crabs. So what's good for you, is good for the bay.

We’ve branded our oysters "Tidal Guides" because the tide is always changing and so will the flavor of our oysters. Let our oysters transport your senses to the Emerald Coast of Florida and to our white quartz sand beaches. 

Tasting Notes:

Our oysters are 2.5-3 inch with typical salinity ranging usually 18-24, a light brine that does not hide the subtle flavors of mineral quartz (mild), blue crab (sweet) and celery (savory).

About the owners – Brandon and Natalie Smith

 Brandon Smith is a marine biologist by trade and feels happiest working on the water. Originally from Arizona, this desert boy quickly fell in love with the ocean at a young age and went to school for marine biology. Living in multiple places, including California and Key West, Brandon decided to make beautiful Pensacola his home and met Natalie at the University of West Florida in 2004. They have lived in Pensacola for nearly 20 years and love all that the area has to offer – good people, good food and a beautiful place to work, live and raise a family.
